I eat a lot of bananas. Like, an obscene amount of bananas. When our realtor posted our listing online, a string of comments came in and there was shock and awe over the pile of bananas in the kitchen. “Whoa, that’s a lot of bananas” and “I’ve never seen so many bananas” were a couple of my favorites. Is it possible to consume too many bananas? I don’t think so. They are the perfect food. They can be eaten fresh, frozen, baked, dried, and mixed into anything and everything. This weekend, I decided to bake this melt in your mouth cinnamon and spice banana nut bread. It’s a quick and easy comfort food for the whole family (and your neighbors, friends, etc.)!
Cinnamon & Spice, Oh So Nice!
I love banana bread because it’s an easy bread to spice up. I’ve added nuts, berries, raisins, chocolate chips, cinnamon, and nutmeg. Bananas just go so well with, like, everything — it’s fun to experiment with all the delicious possibilities. For this batch, I wanted to keep it simple. We had a call for a showing and one of the things we like to do is have some sort of freshly baked good available for people as they walk through. Warm aromas wafting through a house are a sure fire way to make folks feel at home (unless it’s the warm aroma of a fresh, uh, diaper…in which case I would say it’s a sure fire way to clear the room).
Keeping it simple is as easy as adding a dash of cinnamon and a sprinkle of nutmeg into the batter. It doesn’t take much to turn plain old banana bread into something special. Cinnamon and nutmeg are obviously a great way to add that warm, cozy aroma that beckons “welcome home” to friends and family. And, hey, it’s not poo.
Let’s Make Melt In Your Mouth Cinnamon & Spice Banana Nut Bread!
- 1/2 Cup Butter
- 3 Ripe Bananas
- 2 Large Eggs
- 1 TSP Vanilla Extract
- 2 Cups All Purpose Flour
- 1 Cup Granulated Sugar
- 1 TSP Baking Soda
- 1/2 TSP Salt
- 1/2 TSP Cinnamon
- 1/2 TSP Nutmeg
- 1/3 Cup Walnuts
Let’s Do This Thang!
- Preheat the oven to 350 degrees. Grab two loaf pans (I prefer glass) and spray or grease pans with butter. Set them aside.
- Microwave the butter until softened or melted (around 45 seconds to 1 minute) and add it to the mixing bowl.
- Toss in the peeled bananas, mashing them with a fork to combine with the butter.
- Pour in the vanilla extract and the eggs into the mixing bowl and whip together until combined.
- Add in the dry ingredients – flour, sugar, baking soda, salt, cinnamon, and nutmeg. Mix together until fully combined. Add in the nuts and mix until combined.
- Pour the batter into the loaf pans and bake for 45-50 minutes.
- Insert a toothpick into the loaves and remove from oven when the toothpick comes out clean.
- Let loaves cool before removing from pans.
This loaf was a big hit with the folks that took a look through our home – and we were happy to eat up the leftovers! Following a long morning of cleaning and arranging, banana bread was the perfect way to end the day and I’m happy to report that the kiddos even gobbled it up (that’s always a win in this household filled with picky eaters)!
Mix up this bread in under fifteen minutes – you won’t be disappointed! Keep it covered on the countertop for up to 4 days, in the fridge for up to a week, or in the freezer for up to two months. Then, share the second loaf with your neighbors because who *doesn’t* love a freshly baked loaf of banana infused goodness? Sharing is caring, all — especially when it comes to baked goods!
