It’s that time of the year when I start craving fresh greens. Winter leaves me heavy with all the warm comfort foods I’ve enjoyed (I know I’m not alone, here) and as spring creeps its way back into my sights, my taste buds want all things light, fresh, and crisp. A late night internet browse led me to a quick and crisp salad recipe that I’ve already made twice (TWICE!)!

There’s something about the transition from winter to spring that leaves me wanting all the vegetables. Don’t get me wrong, I also still want cookies. However, the longer days and warmer weather are true indicators of new life and growth to come. Anyone that suffers from seasonal depression might be able to relate with this, too.
Maybe it’s the extra Vitamin D from the sunshine that leaves me wanting more vitamins (or it could be all the fudge I ate November – January) but this salad hit the spot! A quick trip to the store and you’ll be ready to enjoy this refreshing chop!
A Quick and Crisp Salad Recipe: You’ll Need
- One head iceberg lettuce
- Romaine hearts
- Roma tomatoes
- Large green olives
- Jarred pepperoncinis
- Cucumber
- Freshly grated Parmesan cheese
- Light Italian dressing
Chop it Up!
Get a large salad bowl ready – I love this wooden salad bowl & serve ware from Folkulture! Chop up all the ingredients. I prefer layering half of the veggies at a time so that everything is mixed together well before adding the dressing. Start with the lettuce and add layers of tomatoes, olives, peppers, and cucumber. Of course, add whatever else sounds good because this is a salad and we don’t judge! Mix with a small amount of Italian dressing (go light – you don’t want your greens drenched because these veggies have so much flavor!). Mix together and top with freshly grated Parmesan cheese.
My favorite part of this salad is the addition of the pepperoncinis. They add a little bit of a zing and slight heat that’s just so good! Next time, I’m going to add a chopped red and orange pepper to add to the color. I know I’ll be making this one regularly and hope you will, too! Until next time, peace, love, & light (after coffee)!
